Halloumi, which is often served with Greek and other Mediterranean cuisine, is an unripened, brined cheese that includes a mixture of sheep’s milk and goat’s milk, and sometimes cow’s milk. It can stand up to the high heat of the grill because of its high melting point.

Simply brush halloumi with olive oil and grill it for 2 minutes on each side. Slice it into pieces and sprinkle with oregano. Add a aqueeze of lemon and a drizzle of olive oil on top. Halloumi pairs beautifully with grilled pita or a fresh salad.
