Making risotto that’s al dente, or firm, to the bite and creamy without being mushy takes some patience! First, toast the rice in hot butter or oil before adding liquid. This technique allows the rice to absorb the liquid while maintaining the right consistency. Then, add warm liquid slowly, stir constantly and pay close attention. The liquid can be chicken, vegetable or other stock, or even water. When each addition of liquid is almost completely absorbed by the rice, add some more. You have to test the consistency to know it’s done.
