This recipe is so simple that it could stand with only two ingredients! Combine 1 pound skinless, boneless chicken breast with 1 cup of your preferred brand of chunky salsa. If you want to add a little more spice, shake in some cumin and dried oregano. Season to taste with salt and pepper. Cook on high pressure for 20 minutes, on natural release. Shred the chicken with two forks. Serve with rice and avocado slices. Shredded cheese and sour cream are optional.
Spaghetti and Meatballs
Italian night comes together in almost no time at all in the Instant Pot. Add 1 pound of frozen meatballs. You can use homemade meatballs from a day when you had more time, or pick up pre-cooked frozen meatballs in the store, such as Cooked Perfect Traditional Italian Style Meatballs or Turkey Meatballs. Place the meatballs in a single layer in the Instant Pot. Break the spaghetti in half and place it on top of the meatballs. Drizzle 1 tablespoon of olive oil over the spaghetti. Pour the sauce and 3 cups of water to cover fully. Cover the Instant Pot and set it to manual. Cook for 10 minutes, on quick release. Sprinkle with grated Parmesan and serve.
Trim most of the fat off of a 3-pound pork shoulder. Cut it into three pieces. Rub the meat with your choice of spice rub. Add once minced onion and 2 cups of … Dr. Pepper. The soda adds a sweetness and kick to the meat and pairs well with spice. Cook it on manual high pressure for 50 minutes, on natural release. Shred the meat, and serve with some of the cooking liquid. Use the meat for a pulled pork sandwich on Hawaiian sweet buns or in tacos with all the fixings.
Add 1 pound of uncooked shrimp to your Instant Pot. Cover with your favorite teriyaki sauce and drizzle with honey. Throw in some broccoli florets, minced onion and two tablespoons of oil. Cook on high pressure for 4 minutes, with quick pressure release.
