Kabobs are the ultimate mix-and-match BBQ food. Consider a build-your-own kabob bar for your next party or family dinner. Prep your meats and veggies (even fruits) and put them out so everyone can customize their own dinner.

Remember, lots of proteins work well in kabobs, including chicken, beef, and seafood. Just remember to cut your proteins into same-sized pieces (about one-inch) so they cook evenly.

Kabob proteins:

  • Chicken breasts
  • Salmon, swordfish or tuna
  • Lean beef such as sirloin steak or sirloin tip
  • Lean pork such as tenderloin or boneless pork chops
  • Scallops

Kabob-friendly veggies and fruits:

  • Acorn or butternut squash (diced and par-cooked)
  • Baby potatoes (halved and par-cooked)
  • Bell peppers
  • Brussels sprouts (blanched)
  • Cherry tomatoes
  • Corn on the cob (cut into wheels)
  • Eggplant
  • Jalapeño peppers
  • Jicama
  • Mango
  • Mushrooms
  • Onions, red or yellow

  • Sweet potatoes (diced and par-cooked)

Grill kabobs over medium heat, turning every few minutes. After removing them from them grill, cover with aluminum foil and let rest for five minutes. Serve over wilted greens, cauliflower rice, or grains, such as brown rice, couscous, or quinoa.
