Pork Tenderloin

Featured Meat: Pork Tenderloin

A naturally lean cut of  pork, tenderloin is also – as the name suggests – one of the most tender.  Pork Tenderloin is also quite versatile, taking well to baking, grilling, and even stir-fries.  Because the meat is so lean, methods like marinating and slow cooking will help keep your dish from drying out.  Using a meat thermometer to monitor temperature can help prevent overcooking.  The USDA recommends cooking to 145F.

Vendor Story: Niman Ranch

Best known for their award-winning pork, Niman Ranch raises livestock traditionally, humanely and sustainably to produce some of the finest tasting meat in the world.  Niman Ranch breeds a cross of Duroc, Chester Whites and Berkshire hogs, well suited to an outdoor environment. Raised outdoors or in deeply bedded pens, the hogs are free to express their natural instinctive behaviors, like rooting and roaming. All Niman Ranch hogs are fed a 100% vegetarian diet. These superior genetics, along with their high quality diet and unsurpassed raising practices result in well marbled pork that is unbelievably moist, tender and juicy!

Niman Ranch began in the early 1970s on an eleven acre ranch in a small coastal town just north of San Francisco. The cattle were raised using traditional, humane husbandry methods and given wholesome all-natural feeds. Before long, Niman Ranch beef became a favorite in local grocery stores and at San Francisco Bay Area restaurants. In 1995, Niman Ranch was introduced to Paul Willis, of Thornton Iowa.  He was working to revitalize sustainable hog farming methods in the Midwest. Paul’s commitment to raising hogs in a humane, old-fashioned way matched Niman Ranch’s principles. Today, the Niman Ranch network has grown to include over 700 independent American farmers and ranchers. The Niman Ranch pork available at Roche Bros. comes primarily from ranchers in upstate New York and Pennsylvania.  Whether they’re raising hogs, cattle or lamb, they all share Niman Ranch’s dedication to the strictest protocols and the belief that all-natural, humane and sustainable methods produce the best possible flavor.
