It’s back to school time and everyone is going in different directions. Make your weeknights easier with quick dinners that leverage ready-to-go items in the store. Here are five new ideas for school night dinners to tempt everyone in your house:
Southwestern Tortilla Soup
Cut the corn off of two ears of corn, dice one onion, and mince two cloves of garlic. Saute the vegetables. Add one 24-ounce box of chicken stock and half a cup of tomato sauce. Let the mixture boil to blend the flavors. Shred chicken from a rotisserie chicken and add it to the soup, along with chopped spinach. Season to taste with salt, pepper and some red pepper flakes. Serve in bowls with shredded cheese, crushed tortilla chips and diced avocado.
Cut a premade pizza dough into quarters and roll out each one. Add ricotta cheese, shredded mozzarella, spinach and pepperoni, or any veggies of your choice. Fold over the dough to make a calzone and press your fingers on the edges. Brush with olive oil and sprinkle with salt. Bake for 30 minutes or until golden brown. Serve with your favorite marinara for dipping.
Weeknight Steak House
It’s simpler than you might think to serve up a quick, steak house dinner any night of the week.
Season your steak with salt and pepper and broil in the oven or grill. Bake potatoes and steam broccoli or string beans. Serve with steak sauce from the grocery aisle and top potatoes with sour cream and chives or bacon bits and cheddar.
Quick Shrimp Scampi
Heat pre-cooked, peeled and deveined shrimp in a frying pan with olive oil, white wine, minced garlic and red chili flakes. Toss with linguini or another pasta of your choice and garnish with lemon.
Make Your Own TV Dinner
Make your kids a heathier version of a TV dinner and let them eat it while watching their favorite show! Choose organic or antibiotic free chicken or soy nuggets from the freezer section, frozen peas and tater tots. Serve with apple sauce!
