Meaning literally “Salad of Capri,” this starter course combines tastes and textures that easily transport you to Italy with every bite. Sweet slices of tomato are layered with fresh mozzarella, and then garnished with leaves of basil, and seasoned with olive oil and salt. And the colors of red, green and white were deliberately selected in this bright dish to resemble the Italian flag.

Fresh mozzarella is made by heating milk with a couple of basic ingredients: citric acid, used to acidify and coagulate the milk, and rennet, which helps form stretchy curds of cheese.
