Cook it medium rare to highlight its texture. Sear it in a pan with some oil or toss it on the grill. On the grill, the fat content keeps it moist. And pay attention! Wild salmon cooks quickly. Most recipes suggest cooking it for 8 to 10 minutes per inch of thickness.
