Fresh cilantro complements pungent, spicy curry in Curried Cauliflower from Roche Bros. Kitchen.
We dress up cauliflower florettes with curry powder and ground turmeric, a root in the ginger family known for its anti-inflammatory properties. We then roast it in our oven with oil, salt and pepper. When it cools down, we top it with chopped fresh cilantro.
Serve it cold as a salad with grilled fish at your next BBQ. It’s also great as a warm side dish with rotisserie chicken and sautéed greens. For lunch, mix it into green salad.
