Poke is the Hawaiian word that means “to slice or cut,” and Poke Bowls are filled with cut up raw fish and an array of other ingredients.
Be sure to use high-quality, sushi-grade fish that is suitable for serving raw. Salmon and tuna are popular choices. Marinate the fish in soy sauce, sesame oil or coconut aminos. Add freshly grated ginger and garlic. Or marinate it in a spicy mayo. For a vegetarian version, try tofu instead of fish.
For the base, consider rice, greens or even rice noodles. Add julienned or chopped vegetables, such as cucumbers, radishes, red cabbage and avocado. Edamame, seaweed salad and kimchi are also great additions for flavor and texture. Keep to the Hawaiian roots of the dish with cubes of pineapple, too. And sprinkle sesame seeds on top!
