Your backyard party guests will love the bright colors and healthful ingredients in Our Kitchen’s new Summer Vegetable Couscous Salad.
To make this flavorful salad, we dice up a rainbow array of fresh summer vegetables, including zucchini, squash, roasted red peppers, onion and mushrooms. We then cook them in oil with fresh chopped garlic and white wine, for flavor and to bring out their sweetness.
We combine the vegetable mixture with couscous, and then we enhance it with a light, citrus dressing of fresh lemon and lime juices, fresh chopped parsley, dill and basil and salt and pepper to taste.
This salad is ideal with grilled chicken or fish, and filling enough to eat by itself for lunch or dinner. Enjoy!
