Ingredients

  • 5 cups chopped curly green kale
  • 1/2 cup thinly sliced red onion
  • 3 tablespoons Brothers Marketplace extra virgin olive oil
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons Brothers Marketplace balsamic vinegar
  • 1 tablespoon dark brown sugar
  • 2 cups hulled and halved strawberries
  • 1 large ripe avocado, peeled, pitted and sliced
  • 1/3 cup chopped raw hazelnuts
  • 1/3 cup crumbled balsamic BellaVitano or Parmesan cheese

DIRECTIONS

  1. In large bowl, add kale, onion, oil, salt and pepper; use hands to massage oil into kale. Let kale stand 10 minutes.
  2. In medium bowl, whisk vinegar and sugar until sugar dissolves; add strawberries, toss and let stand 5 minutes.
  3. Add avocado and strawberry mixture to kale mixture; toss to combine. Serve salad topped with hazelnuts and cheese. Makes about 8 cups.
