Ingredients

  • 2 tablespoons Brothers Marketplace extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 bunch broccoli rabe or broccolini, ends trimmed (about 1 pound)
  • 1/2 cup Full Circle Organic chicken stock
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 pint cherry or grape tomatoes
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon sea salt

DIRECTIONS

  1. In large, high-sided skillet, heat oil over medium-high heat; add garlic and cook 30 seconds or until fragrant, stirring frequently. Add broccoli rabe; cook 1 minute, stirring occasionally.
  2. Add stock and crushed red pepper; reduce heat to medium. Partially cover and cook 2 minutes. Stir in tomatoes; partially cover and cook 6 minutes or until broccoli rabe is tender-crisp. Stir in lemon juice and salt.

Broccoli rabe is a hearty, bitter green that’s a traditional Italian staple. Since its bitter flavor can be an acquired taste, lessen the sharpness by first boiling the broccoli rabe for 5 minutes, then plunging it into a bowl of ice water. Once cooled, thoroughly dry the broccoli rabe before adding it to the hot oil.
