  • Herbed Fresh Mozzarella
  • 1/4 cup Filippo Berio® Extra Virgin Olive Oil
  • 1 teaspoon chopped fresh Italian parsley leaves
  • 1 teaspoon chopped fresh mint
  • 1/8 teaspoon Food Club salt
  • 1/8 teaspoon coarse ground pepper
  • 8 ounces fresh mozzarella cheese balls (ciliegine or bocconcini)
  • Smoked Trout Rillettes
  • 1/2 cup mascarpone
  • 1/2 cup Food Club sour cream
  • 3 tablespoons chopped fresh chives
  • 2 tablespoons minced green onion
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon kosher salt
  • 1 pinch Food Club pure ground black pepper
  • 2 packages (3.75 ounces each) skinless smoked trout in oil
  • Mixed Greens & Beet Salad
  • 8 cups spring mix salad greens
  • 1-1/2 cups halved red and/or yellow grape tomatoes
  • 1 cup favorite vinaigrette
  • 1/2 cup shaved fennel
  • 2 cups sliced pickled beets
  • Optional Fixin's
  • 4 Noshman's New York bagels, split and toasted
  • 8 ounces Foley Fish sliced smoked salmon
  • 1/3 cup sliced red onion
  • 2 tablespoons rinsed capers


  1. For the Herbed Fresh Mozzarella: In medium bowl, whisk together oil, parsley, mint, salt and pepper. Add mozzarella and toss to coat; cover and refrigerate 1 hour or overnight to marinate.
  2. For the Smoked Trout Rillettes: With mixer on medium-high, beat mascarpone and sour cream 3 minutes or until light and airy. Add chives, green onion, dill, lemon juice and zest, salt and pepper; mix on low speed until combined. Break up trout into small pieces; gently fold trout into mascarpone mixture being careful not to break it apart.
  3. To serve, in medium bowl, toss greens, tomatoes, vinaigrette and 1/4 cup fennel; divide into small bowls and top with beets. Place mozzarella in small plate; garnish with remaining 1/4 cup fennel.
  4. Assemble on a board, bagels, salad, mozzarella, sliced smoked salmon and smoked trout rillettes; sprinkle salmon with red onion and capers.
