Ingredients

  • Cherry Chutney
  • 2 teaspoons vegetable oil
  • 1 large onion, chopped
  • ¼ cup packed light brown sugar
  • ¼ teaspoon garam masala
  • ¼ teaspoon kosher salt
  • ½ cup red wine or cider vinegar
  • ½ pound fresh or frozen pitted cherries, thawed if necessary
  • Burgers
  • 1 ½ pounds ground chuck
  • 1 ½ teaspoons kosher salt
  • ¾ teaspoon ground black pepper
  • 8 ounces sharp white Cheddar cheese, sliced
  • 4 large eggs
  • 2 teaspoons vegetable oil
  • 4 brioche buns
  • 4 leaves green leaf lettuce
  • 4 slices red onion
  • 8 slices smoked bacon, cooked and cut in half

DIRECTIONS

  1. Prepare Cherry Chutney: In small saucepot, heat oil over medium heat; add onion and cook 5 minutes or until softened and beginning to brown, stirring occasionally. Stir in brown sugar, garam masala and salt; stir in vinegar. Stir in cherries; cook 5 minutes or until mixture thickens, stirring occasionally. Makes about 2 cups.
  2. Prepare Burgers: Gently mix ground chuck, salt and pepper; form into 4 patties. Prepare outdoor grill for direct grilling over medium heat. Place burgers on hot grill rack; cover and cook 8 to 10 minutes or until internal temperature reaches 160°, turning once and topping with cheese during last 2 minutes of cooking.
  • Meanwhile, in large skillet, cook eggs in oil sunny-side up or to desired doneness. Spread each bottom bun with 2 tablespoons chutney; top with lettuce, red onion, burger, bacon, egg and top bun.
