Ingredients

  • 1 - 15oz. can of Libby's Pumpkin Puree
  • 4 large eggs
  • 2/3 cup water
  • 1 cup vegetable oil
  • 3 cups granulated white sugar
  • 3 1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 teaspoon ground nutmeg

DIRECTIONS

  1. Preheat oven to 350 degrees
  2. In mixing bowl combine pumpkin, eggs, oil, water, and sugar and whisk until well blended.
  3. In a separate bowl combine the dry ingredients...flour, baking soda, salt, cinnamon, cloves, ginger, and nutmeg and whisk together.
  4. Next, stir the dry ingredients into the wet just until blend well...important not to overmix!
  5. Spray and flour 2 loaf pans and pour the mixture evenly into both.
  6. Bake for 50-60 minutes until a toothpick comes out clean.
  7. Enjoy with cream cheese or my favorite...pumpkin butter!!
