Ingredients

  • 2 cups Full Circle Organic Unsweetened Almond Milk
  • 1 cup Full Circle Organic Quinoa
  • 1/4 cup chopped almonds
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon Full Circle Organic Butter
  • 1 tablespoon coconut oil
  • 2/3 cup Full Circle Organic Frozen Blueberries

DIRECTIONS

  1. Heat oven to 325 degrees.
  2. Bring almond milk to boil in a medium saucepan, add quinoa and return to a boil. Reduce heat to low, cover and simmer, 12 to 15 minutes, until most of the milk is absorbed.
  3. Meanwhile spread almonds onto a shallow pan and toast in oven 4 to 6 minutes, be careful not to burn; cool and set aside.
  4. Stir brown sugar, cinnamon and salt into quinoa, continue cooking until all the almond milk is absorbed; remove from heat and stir in butter and coconut oil.
  5. Divide quinoa into 2 serving bowls, top each with 1/3 cup blueberries and 2 tablespoons toasted almonds.
