Maitre D’ Butter is a classic compound butter that contains herbs, often used in place of sauces and creams in French cooking. Here, it’s used to accompany delicious grilled Foley Fish oysters!
1) Combine all ingredients except oysters to create butter. 2) Preheat grill. 3) Add oysters, cup side down to grill. 4) Grill, covered, for approximately 2 minutes until oysters pop. Once they pop, use oyster knife to open oyster, slide knife under oyster meat to remove from muscle and loosen. 5) Top each oyster with maître d butter and allow to melt. Serve warm.
