Ingredients

  • 24 oysters, opened
  • 3 tablespoons butter
  • 1/2 pound frozen finely chopped spinach, thawed
  • 1/2 small onion, grated
  • 1 tablespoon Pernod
  • pinch of nutmeg
  • salt and pepper, to taste
  • 5 tablespoons fine dry white breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 3 strips bacon, cut into 1” pieces (optional)
  • 1 1/2 cup rock salt

DIRECTIONS

1) Preheat oven to 450 degrees. 2) In a saucepan over low heat, melt butter. Add chopped spinach, grated onion, Pernod, nutmeg and salt and pepper to taste. Heat through then remove from heat. 3) Stir in breadcrumbs. 4)Place a generous amount of mixture on each oyster. Sprinkle with Parmesan cheese. If desired, place bacon strip on top. 5) Place oysters on bed of rock salt and bake for approximately 8 minutes or until bacon is crisp.
