At the time of its creation Oysters Rockefeller, was served with a sauce so rich, they named it after John D. Rockefeller, the richest man of the time. Today, you can find many versions of the classic appetizer, try this one out at your next gathering, courtesy of Foley Fish!
1) Preheat oven to 450 degrees. 2) In a saucepan over low heat, melt butter. Add chopped spinach, grated onion, Pernod, nutmeg and salt and pepper to taste. Heat through then remove from heat. 3) Stir in breadcrumbs. 4)Place a generous amount of mixture on each oyster. Sprinkle with Parmesan cheese. If desired, place bacon strip on top. 5) Place oysters on bed of rock salt and bake for approximately 8 minutes or until bacon is crisp.
