  • 2 slices of Bread, (your choice)
  • 4-6 oz Pineland Pepper Jack, sliced (enough to cover two slices of bread)
  • 1 ea small Sweet Onion
  • ¼ cup Olive Oil
  • 3 slices Bacon
  • ½ ea Avocado, (sliced)
  • Butter, (enough to spread on the outside of two slices of bread)


In a sauté pan, add the oil on medium to low heat and cook the onions slowly stirring occasionally for 6-8 minutes or until a light golden brown, (making sure not to burn them). Bake the bacon on a sheet pan at 375 for 8-10 minutes or until desired doneness. Remove from the oven and place the cooked bacon on paper towels to help remove the fat. Cover both slices of bread with the pepper jack. Lay the sliced avocado across one slice of bread and top that with caramelized onions and bacon. Put the sandwich together and spread the butter on the outside of the slices. Grill in a pan on the stove on medium heat for 3-4 minutes on each side or until cheese has melted and the bread is golden brown.
