  • Pomegranate Liqueur
  • 1 cup Food Club granulated sugar
  • 1-1/2 cups pomegranate arils
  • 1-1/2 cups vodka
  • 1 (32-ounce) glass jar with lid
  • Pomegranate Cosmo
  • Crushed ice
  • 3-1/2 cups Cointreau
  • 3/4 cup plus 2 tablespoons fresh lime juice
  • Lime wedges
  • Food Club granulated sugar

  1. Prepare Pomegranate Liqueur: In small saucepan, heat sugar and 1 cup water to a simmer over medium-high heat. Simmer 3 minutes or until mixture is clear; do not stir. Remove from heat; cool.
  2. In food processor, pulse pomegranate arils to coarsely chop; transfer to medium bowl. Stir in vodka and sugar mixture. Makes about 4 cups.
  3. Pour vodka mixture into 32-ounce jar; secure with lid. Let stand 3 weeks in cool, dark place, shaking every other day.
  4. Strain liqueur through fine-mesh strainer into bowl; discard solids. Refrigerate in an airtight container up to 6 months. Makes about 3-1/2 cups.
  5. Prepare Pomegranate Cosmo: For each serving, in cocktail shaker or jar, add crushed ice, 1/2 cup Pomegranate Liqueur, 1/2 cup Cointreau and 2 tablespoons fresh lime juice; cover and shake to combine. Run lime around rim of martini glass and dip rim in sugar; strain Pomegranate Cosmo into martini glass.
