Ingredients

  • 1/4 cup Roche Bros. organic pepitas
  • 1/2 chipotle pepper in adobo sauce, minced
  • 3 tablespoons Brothers Marketplace balsamic vinegar
  • 2-1/2 tablespoons canola oil
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons Full Circle Organic honey
  • 1/4 teaspoon salt
  • 1 bag (6 ounces) baby spinach
  • 1/2 cup drained and rinsed reduced sodium black beans
  • 1 ear fresh corn, kernels cut from cob

DIRECTIONS

  1. In large skillet, toast pepitas over medium heat 5 minutes or until lightly browned, stirring frequently; transfer to plate to cool.
  2. In large bowl, whisk chipotle pepper, vinegar, oil, cocoa powder, honey and salt. Makes about 1/3 cup.
  3. Add spinach to dressing; toss until combined. Serve salad topped with black beans, corn and pepitas.
