A Lollipop Drumstick is just like it sounds. It’s a drumstick with all the juicy, flavorful dark meat balled up at the base with the skin and tendons at the knuckle-end removed. It looks like a lollipop and is enjoyed like one too. Lollipop Drumsticks have a great presentation and are cleaner to eat than a traditional drumstick. These super mobile treats are an excellent party trick!

Here’s How to “Lollipop” Drumsticks:

  • First, using a paring knife, cut around the knuckle of the drumstick through the skin and tendons, about 2 inches above the knuckle.
  • Next, peel the lower 2 inch portion of skin and tendons down over the knuckle and use kitchen shears or your knife to remove it from the drumstick.
  • Last, hold the drumstick upside down by the cleaned knuckle and pull the rest of the meat and skin down toward the base of the drumstick. Trim as desired and prepare for cooking!
