- In large bowl, toss shrimp, 1 teaspoon salt and baking soda; cover and refrigerate at least 30 minutes or up to 1 hour.
- In medium saucepot, cook lemons, lemon zest, shrimp, remaining 1 tablespoon salt and 1 quart cold water over medium-high heat 7 minutes or until shrimp turn opaque throughout, adjusting heat as necessary to maintain water at barely steaming or 170°; drain and rinse with cold water until cool. Transfer shrimp mixture to bowl; cover and refrigerate. Makes about 16 shrimp.
