- In large skillet, toast almonds over medium heat 5 minutes or until lightly browned and fragrant, stirring occasionally; transfer to plate to cool.
- In large bowl, whisk shallot, oil, vinegar, honey, mustard, salt and pepper. Add remaining ingredients and almonds to dressing; toss. Cover and refrigerate at least 30 minutes or up to 4 hours before serving. Makes about 5 cups.
