Directions

  1. With back of spoon, smash cut sides of lemongrass to separate layers and release the flavor. In large skillet, whisk coconut milk, soy sauce, vinegar, oil, ginger, fish sauce and lemongrass; heat to a boil over medium-high heat, stirring frequently. Reduce heat to medium-low. Add cod; cook 8 minutes or until internal temperature of cod reaches 145°, turning once.
  2. With spatula, transfer cod to platter; remove lemongrass and stir in green onions. Spoon coconut mixture over cod; garnish with cilantro, if desired. Makes about 1 1/2 cups coconut mixture.
