
Cranberry-Pomegranate Ring

- In small saucepot, heat pomegranate juice to a boil over high heat. Place gelatin in large bowl; whisk in pomegranate juice until dissolved. Stir in sparkling water; cover and refrigerate 1½ hours or until thickened.
- In food processor, pulse cranberries until small pieces remain. Stir pomegranate arils, walnuts, lime zest and cranberries into gelatin mixture; pour into 5-cup ring mold or 6-cup Bundt® pan. Cover mold tightly with plastic wrap; refrigerate 3 hours or until set
- To release ring, gently run thin, flexible spatula around inside edge of ring; dip bottom of pan in hot water for 3 seconds. Place plate over pan; invert to release ring. Cut ring into 12 slices; serve topped with whipped topping and walnuts, if desired.
