- Cover half of outdoor grill rack with aluminum foil. Prepare outdoor grill for direct grilling over medium-high heat. In large bowl, gently mix ground chuck, chile peppers, 1 teaspoon oil, and 1/2 teaspoon each salt and black pepper until well blended but not overmixed; form into 4 (1/2-inch-thick) patties.
- In small bowl, stir mayonnaise and adobo sauce. In medium bowl, toss mushrooms, onion, and remaining 2 teaspoons oil, and 1/4 teaspoon each salt and black pepper.
- Place burgers on hot grill rack and mushroom mixture on foil-covered grill rack; cover and cook 8 minutes or until internal temperature of burgers reaches 160° and mushrooms and onion are tender, turning burgers once and stirring mushroom mixture once. During last minute of cooking, top burgers with cheese and cook 1 minute or until cheese is melted.
- Spread mayonnaise mixture over bottom buns; top with burgers, lettuce, tomato and mushroom mixture.
