
Homemade Everything Soft Pretzels

- Line 2 rimmed baking pans with parchment paper; spray large bowl with cooking spray. In stand mixer with dough hook attached, mix yeast, flour, sugar and salt on low 1 minute or until incorporated; add 1 1/2 cups lukewarm water (about 95°) and mix 2 minutes or until incorporated. Add molasses and butter; mix 1 minute or until incorporated. Increase speed to medium; knead 5 minutes or until smooth and elastic.
- Form dough into a ball and place in prepared bowl; cover with plastic wrap and let stand in warm spot 1 hour or until dough has almost doubled in size.
- Punch down dough; transfer to work surface and divide into 8 equal pieces. Roll each piece into a ball; place on work surface and spray with cooking spray. Cover balls with plastic wrap; let stand 15 minutes.
- Working with 1 dough ball at a time, roll into 28-inch-long rope. Hold ends of rope between thumb and forefinger of each hand; loop dough toward you and cross 1 end over the other with about 2 inches of each end overhanging. Twist overhanging ends together twice, then fold ends up and press onto the center side of outside loop to make a 5-inch-wide pretzel and place on prepared pan; repeat with remaining dough balls, placing pretzels 2 inches apart. In small bowl, whisk baking soda and 2 tablespoons water; liberally brush over pretzels and let stand 15 minutes.
- Adjust 2 oven racks to top and middle positions; preheat oven to 425°. In small bowl, whisk egg and 1 tablespoon water. Brush pretzels with egg mixture; sprinkle half with everything bagel seasoning and the other half with spicy everything bagel seasoning. Bake pretzels 15 minutes or until golden brown, rotating pans once; transfer to wire rack to cool. Makes 8 pretzels.
- Serve pretzels with dipping sauces, if desired.
