- Preheat oven to 325°. Place ham, cut side down, in roasting pan; cover loosely with aluminum foil. Bake 1 hour.
- In small saucepan, heat juice, rum and honey to a simmer over medium heat; simmer 10 minutes or until thickened and reduced to about 1½ cups. Remove saucepan from heat; stir in raisins, sugar, mustard and cayenne pepper. Makes about 2 cups glaze.
- Remove ham from oven; brush ham with some glaze. Bake 45 minutes or until internal temperature reaches 120°, brushing with additional glaze every 15 minutes.
- Transfer ham to serving platter; cover loosely with foil and let stand 15 minutes before serving. Internal temperature will rise to 140° upon standing. Pour any drippings and raisins from roasting pan into remaining glaze; serve with ham.
