
Marry Me Chicken Thighs with Orzo

Ingredients
- Grated Parmesan cheese and/or chopped fresh basil for garnish (optional)
Directions
- Prepare orzo as label directs; drain and return to saucepot. Stir in 1 tablespoon oil; cover to keep warm. Makes about 3 cups orzo.
- Sprinkle both sides of chicken with black pepper and paprika. In large skillet, heat remaining 1 tablespoon oil over medium heat. Add chicken, cook 10 minutes or until chicken is browned, turning once. Transfer chicken to plate. Add garlic and sun-dried tomatoes to skillet; cook 1 minute or until fragrant, stirring frequently. Stir in Neufchâtel cheese, broth, Italian seasoning and crushed red pepper. Add chicken to skillet; cook 9 minutes or until cheese is melted and internal temperature of chicken reaches 165°, stirring frequently. Makes about 1 cup sauce.
- Serve chicken mixture over orzo sprinkled with Parmesan cheese and/ or basil, if desired.
