No-Cook Moroccan Couscous Salad

  1. In large bowl, whisk lemon juice and ¾ cup water; stir in couscous and let stand 15 minutes. Fluff couscous with fork. Makes about 2 cups couscous.
  2. In seperate large bowl, whisk garlic, orange juice, oil, cayenne pepper, cumin, coriander, salt and black pepper; fold in beans, onion, raisins, carrot, mint, parsley and couscous. Serve salad sprinkled with pistachios. Makes about 5 cups salad.
