Directions
- Preheat oven to 450°; line rimmed baking pan with aluminum foil and spray with cooking spray. In medium bowl, stir beets, parsley, pistachios, mint, onions, oil, lemon juice, and ¼ teaspoon each salt and pepper; cover and refrigerate. Makes about 4 cups tabbouleh.
- Place salmon on prepared pan; sprinkle with remaining ½ teaspoon each salt and pepper. Roast salmon 15 minutes or until internal temperature reaches 145°. Makes 4 salmon fillets.
- Serve salmon with tabbouleh garnished with lemon wedges, if desired.
