- In small skillet, toast coconut over medium heat 5 minutes or until lightly toasted and fragrant, stirring frequently.
- In large bowl, beat cheese on low speed 1 minute or until light and fluffy. Add sugar, milk and vanilla extract; beat on medium-high speed 1 minute or until smooth and creamy, scraping down sides of bowl. Fold in whipped topping.
- In 3-quart glass trifle dish or deep bowl, layer 1/3 each pound cake, crushed pineapple, cheese mixture and toasted coconut; repeat layers twice with remaining ingredients. Cover tightly with plastic wrap; refrigerate at least 1 hour before serving. Makes about 9 3/4 cups.
