Roasted-Lime Halibut with Citrus Salsa

Directions

  1. Preheat oven to 450°. Line rimmed baking pan with aluminum foil; spray with cooking spray. Slice off ends of orange and place, cut side down, on cutting board; slice down sides of orange to remove skin and white pith with pairing knife. Gently cut long sides of orange membranes to release each segment; finely chop. Repeat process with lime.
  2. In medium bowl, stir jalapeño, onion, cilantro, honey, cayenne pepper, orange and lime; cover and refrigerate. Makes about 1 cup salsa.
  3. In small bowl, stir garlic, butter, lime zest and lime juice. Makes about ¼ cup.
  4. Place halibut on prepared baking pan; sprinkle with salt and black pepper. Top halibut with butter mixture; roast 12 minutes or until internal temperature reaches 145°. Makes about 4 halibut fillets.
  5. Serve halibut topped with salsa.
