Directions

  1. Pat salmon dry with paper towel. In food processor, pulse salmon, egg, breadcrumbs, parsley and mustard until some coarse pieces remain, scraping bowl occasionally; form into 8 (1/2-inch-thick) patties. Spray both sides of patties with cooking spray; sprinkle with seasoning.
  2. Heat large skillet over medium-high heat; spray with cooking spray. In 2 batches, if necessary, add sliders and cook 3 minutes or until golden brown; turn sliders and reduce heat to medium. Cook sliders 2 minutes or until internal temperature reaches 145°.
  3. In small bowl, stir mayonnaise, cream cheese, lemon juice, salt and pepper. Makes about 1/3 cup.
  4. Spread cut sides of bottom buns with mayonnaise mixture; top with sliders, arugula and top buns, cut side down.
