- Preheat oven to 425°; line large rimmed baking pan with parchment paper. In medium saucepan, melt butter over medium heat. Stir in apples and brown sugar; cook 10 minutes or until thickened, stirring occasionally.
- In large bowl, whisk eggs, pancake mix, milk, oil, cinnamon and vanilla extract; fold in apple mixture. Spread pancake mixture on prepared pan and sprinkle with pecans; bake 12 minutes or until top is lightly browned and toothpick inserted in center comes out clean. Cut pancakes into 15 pieces; serve drizzled with syrup.
