- In large skillet, toast walnuts and pepitas over medium-high heat 4 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.
- On mandoline with julienne blade, cut apple lengthwise.
- In large bowl, whisk garlic, mustard, lemon juice, oil, salt and pepper; fold in Brussels sprouts, radicchio, kale and apple. Makes about 7 cups.
- Serve salad sprinkled with walnut mixture.
