  1. Preheat oven to 425°. In small bowl, whisk ¼ cup sugar, cinnamon, salt, pepper, allspice and nutmeg. In large, shallow roasting pan, place beef roast, fat side up; rub all sides with sugar mixture. Roast beef 15 minutes. Reduce oven temperature to 325°; roast 1 hour 10 minutes or until internal temperature reaches 135° for medium-rare, tenting with aluminum foil if beef is browning too quickly. Transfer beef to cutting board; tent with aluminum foil and let stand 20 minutes.
  2. In medium saucepot, melt butter over medium heat. Whisk in syrup and remaining ¾ cup sugar; heat to a simmer. Carefully whisk in bourbon; reduce heat to low and cook 20 minutes or until slightly thickened, whisking occasionally. Makes about 2 cups glaze.
  3. Cut beef against the grain into 12 (1/2-inch-thick) slices; serve drizzled with glaze.
