
Sweet Potato, Black Bean & Kale Pizza

Ingredients
- Nonstick cooking spray
- All-purpose flour for dusting
- Chopped fresh basil for garnish (optional)
Directions
- Preheat oven to 500°; spray pizza pan or rimless cookie sheet with cooking spray.
- In medium microwave-safe bowl, add potato and 2 tablespoons water; cover bowl with plastic wrap, leaving an edge open to vent, and heat in microwave oven on high 8 minutes or until very tender. In food processor, purée potato mixture on high until smooth. Makes about 1 ½ cups.
- In small bowl, toss kale and ½ tablespoon oil.
- On lightly floured work surface, roll dough into a 12-inch round; carefully transfer to prepared pan and poke several times with fork to vent. Brush dough with remaining 1 tablespoon oil; leaving ½-inch border, spread with potato purée and sprinkle with salt and pepper. Top with cheese, beans, onion and kale mixture; bake 18 minutes or until bottom and edges of crust are golden brown and slightly crisp, rotating pan once.
- Cut pizza into 8 slices; sprinkle with basil, if desired.
