- In large bowl, whisk egg, flour, 1 tablespoon oil, salt, garlic powder, onion powder and 2 tablespoons water; fold in zucchini and cheese. Makes about 1 heaping cup.
- In small bowl, whisk yogurt and chives. Makes about 1/2 cup.
- In large nonstick skillet, heat remaining 2 tablespoons oil over medium heat. In 2 batches, drop zucchini mixture, about 1 tablespoon at a time, into skillet; flatten with spatula into 2-inch circles and cook 5 minutes or until golden brown, turning once. Makes about 18 fritters.
- Serve fritters with yogurt mixture for dipping.
